I have to admit, I don't use photo references often since I don't necessary want a realist anatomy/feeling.
It's not the only way either, but it's probably the simplest one to my opinion.

The point of this process is to show how can you emphasize the silhouette and anatomy while staying "close to reality" and give a more "Anime" feeling. First, DON'T TRACE !!!! or you won't ( with difficulty ) fly away from reality :)

1. Shape, don't wreck your brain on that one, just draw the very basic silhouette.
2. Now you can wreck your brain XD I articulate the body like BJD/an articulated puppet. You don't have to stick 100% to the photo.
3. Simply showing the contour. That's the lines you will follow for drawing socks, shorts, gloves ect...  It's not necessary but still showing it XD

4. Finally drawing the body :)
5. Tada !! You've drawn a body from a photo reference !!!!
6. Putting clothes on it.
7. And some colors, Finis ! 0v0

Once your brain and hand have done those steps for long enough you will naturally skip some steps. I, for example, go directly from step 1 to step 5 because I'm used to it. It's difficult to explain but it's gotten instinctive, practice and repetition is the key of learning >0v0<
